Sundust Salad Dressing Recipe

I get excited about all sorts of things. Salad dressing is rarely one of them.


Until today, my friends. I’m PUMPED about this Sunshine Dust salad dressing. Here’s why: 


  • As this recipe has taught me, making your own salad dressing is incredibly easy, but makes you feel SO fancy.
  • The flavor is an utter delight: a triple threat of bright (lemon), bold (dijon mustard), and earthy (Sunshine Dust), all partying in your mouth with every bite. 
  • Not only does it taste good, but it makes your body FEEL good.

Plus, this is a salad dressing that can go above and beyond the call of salad duty. It’s tasty as a dip for veggies or chickie tendies. It makes for a mouthwatering marinade. You can toss it with veggies then roast them for a yummy side dish. 


Now, while every component in this recipe is important, the Sunshine Dust is crucial. The bold flavors of lemon and dijon might be the melody, but Sunshine Dust is the harmony that really makes this salad dressing sing. But I digress. I already mentioned this recipe is easy, right? What are you waiting for? Grab the ingredients and let’s go. 


A few things to know about this recipe:


  • This recipe is very easygoing. (Read: You can mess with the recipe to your heart’s content.) Don’t like or don’t want to add honey? Skip it. Prefer avocado oil to olive oil? Go for it. Want more or less salt? You do you, baby. 
  • A few more suggestions for how to doctor the recipe to suit your flavor preferences? Add some pureed garlic, swap out the lemon juice for lime juice, use agave instead of honey, try using grainy vs. smooth Dijon mustard, etc. 
  • What kind of salad should you serve it with? I like it with a mix of kale, nuts, golden carrots (why not stay golden, right?), and other antioxidant-rich yummies like blueberries.
  • This recipe can easily be halved or doubled if you’re so inclined and able to do the math. But even if you get the math wrong, as I mentioned, the recipe is easygoing. 
  • You can store leftovers in the fridge; just let it warm up to room temperature and give it a whisk before serving for best results. 
  • Turmeric is GREAT for you thanks to naturally-occurring curcumin, which is said to have anti-inflammatory, antioxidant, and potentially even anti-cancer properties. 

 


Makes about 6 servings 

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons honey
  • 2 teaspoons Sunshine Dust 
  • 2 teaspoons Dijon mustard
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt 

In a large bowl, combine all of the ingredients. Whisk vigorously, until the mixture is combined. Serve immediately.
